The Birthday Table at Guelaguetza

There is a particular sound a restaurant makes when a group of twelve walks in for somebody’s birthday. Chairs scraping together, somebody counting heads twice, the guest of honor pretending to be embarrassed. We have been listening to that sound in this room since 1994, and it is still our favorite.

Thirty years of quinceañeras, anniversaries, graduations and first dates have happened at these tables, and the friendships that started here are the reason half our regulars know each other’s names. So when you bring your people for a birthday, you are not booking a reservation. You are adding one more night to a room that was made for exactly this.

Here’s what to put on the table.

Margaritas by the Pitcher

Start here. Fresh lime, agave, and a pitcher in the middle of the table before anyone has opened a menu. Pick your flavor, pick your rim, add mezcal if it’s that kind of birthday. One pitcher gets the toast out of the way. Two means somebody’s telling the story about last year.

Festival de Moles

counts seven moles. We put four of them on one plate, negro, rojo, coloradito and estofado, each in its own little bowl, with chicken or pork spare ribs and rice to run through them. Order this first and set it in the middle, because it does two things at once: it feeds people, and it starts the argument. Somebody will defend the negro, dark as the inside of a church. Somebody will say coloradito is the real one because it’s the one their grandmother made. Nobody will be wrong. This is a plate built for two that gets picked over by six, which is the correct way to eat it.

Botana Oaxaqueña

This is the platter you can see from the parking lot. Tasajo, cecina, chorizo, a chile relleno, spare ribs, quesillo pulled into ropes, grilled onions, nopales, memelitas, guacamole, beans. It arrives like a parade and it has no plates of its own, which is the point. Within ten minutes the person at the far end is reaching past two people they just met for a rib, and by the end of the night those three have a group chat. For a birthday, the full size. Half is for a Tuesday.

Tlayuda vegetariana

Tlayuda Vegetariana

The tlayuda is the dish Los Angeles took the longest to understand and now can’t stop ordering: a fifteen-inch heirloom-corn tortilla from Oaxaca, crisped over fire until it crackles. This one is spread with beans and a smoky seed paste, then piled with arugula, cherry tomatoes, cactus, mushrooms and avocado, and it’s the one that keeps the vegetarian at the table from ordering a side of rice and a sad look. It is also, quietly, one of the best things we make. Order two. People tear off their own pieces, and the tearing is half of it.

Tacos de Barbacoa de Chivo

Goat, slow-cooked the way it is in the valley, folded into a twelve-inch handmade tortilla with a cup of consommé on the side for dipping, and onions, cilantro and jalapeños to make it yours. There is always one person at the birthday who has never had goat and is pretending they have. Give them this. It converts. These are the first thing to vanish, so count the table and add two.

Chiles Rellenos

Not the one you’re picturing. Ours is a chile de agua, the pale, wide pepper that only grows in the Oaxaca valley, stuffed with chicken picadillo or cheese and set in a rustic tomato sauce. Two to an order. It’s the plate that makes somebody go quiet for a second and then lean over and ask what it is. Every birthday needs one dish the guest of honor didn’t know to want.

Tres Leches (and the cake, if you call ahead)

A birthday ends with something sweet or it didn’t happen. Our tres leches is sponge cake soaked in three milks, cold, soft, and gone in about four forkfuls. And the part most people don’t know: call ahead and we’ll have a whole cake ready for the candles, so you’re not sneaking a bakery box past the host. You handle the singing. We’ll handle the moment.

Book the table, bring your people, and let us take care of the rest.
